Au Gratin Sauce For Fish Recipe

Ingredients
| Oil | 2 Tablespoon | |
| 4 tablespoons barley flour | ||
| Chicken stock | 1 1/3 Cup (16 tbs) | |
| Tomato juice | 4 Tablespoon | |
| Tamari soy sauce | 1 Teaspoon | |
| Cheddar Cheese | 3/4 Cup (16 tbs), grated | |
| 3 tablespoons skim milk powder | ||
| Water | 1/3 Cup (16 tbs) | |
| Parsley | 1 Tablespoon, chopped | |
Directions
In the top of a double boiler, heat oil and gradually stir in barley flour.
Heat stock and add it to oil and flour, a little at a time, blending until smooth.
Stir in tomato juice and tamari soy sauce.
Add grated cheese gradually, stirring constantly to blend it in.
Combine skim milk powder and water with a wire whisk and add to sauce, mixing until smooth.
Add chopped parsley.
Spoon some sauce over broiled fish just before serving and broil for 3 minutes or until it is golden brown.
