Turkey Pita Sandwiches Recipe
Ingredients
| Olive oil | 1 Tablespoon | |
| 1 pound ground raw turkey | ||
| Onion | 1 Large, chopped | |
| 1 large clove garlic, minced | ||
| 2 large red or green peppers, chopped | ||
| Oregano leaves | 1 Teaspoon, crushed | |
| Dried thyme leaves | 1 Teaspoon, crushed | |
| 3 tablespoons good quality red wine vinegar or red wine | ||
| Ground black pepper | To Taste | |
| Low fat yogurt | 1 Cup (16 tbs) | |
| 4 small Kirby cucumbers, cubed 3 to 6 large whole wheat pitas | ||
| 2 large tomatoes, sliced 6 scallions, thinly sliced | ||
Directions
Heat oil in large skillet and saute turkey in hot oil, breaking up with fork, until meat browns.
Add onion, garlic, red peppers, oregano and thyme and cook until onion is soft over medium low heat.
Add vinegar or wine and pepper.
Freeze.
To serve, defrost and heat mixture thoroughly.
Adjust seasonings.
Mix yogurt with cucumbers.
Toast pitas and cut in half.
Serve meat topped with cucumbers and yogurt.
Serve tomatoes and scallions on the side.
Sandwiches can be made of all the ingredients, using the pita bread.
The amount of bread each person desires depends very much on individual capacity.
