Assorted Vegetable Fritters Recipe
Ingredients
| Eggplant | 1 Small | |
| 1 recipe Basic Fritter Batter | ||
| 1 zucchini, cut into 1/4 inch slices | ||
| 1 small cauliflower, separated into florets | ||
Directions
Thinly slice eggplant; dip into batter one slice at a time.
Drop several at a time into hot (370°F) oil in deep fat fryer; brown on one side.
Turn; brown other side.
Remove with slotted spoon; drain on paper toweling.
Place on ovenproof platter; keep warm until zucchini and cauliflower are cooked in same manner. (These can also be served for hors d'oeuvres.)
