Asparagus With Orange Sauce Recipe

Ingredients

 
1 1/2 pounds fresh asparagus spears
 
1/2 cup reduced-calorie mayonnaise
 
3 tablespoons water
 
1 teaspoon grated orange rind
 
1 tablespoon unsweetened orange juice
 
Dash of hot sauce

Directions

Snap off rough ends of asparagus.
Remove scales with a knife or vegetable peeler, if desired.
Cook asparagus, covered, in a small amount of boiling water 6 minutes or until crisp tender.
Drain and place on a serving platter; set aside, and keep warm.
Combine mayonnaise, water, orange rind, juice, and hot sauce in a small non-aluminum saucepan, stir until well blended.
Cook over low heat 3 minutes or until thoroughly heated, stirring constantly.
Serve immediately over asparagus.
