Asparagus Soup Recipe

Ingredients
2/3 cup chopped yellow onion (about 1 small onion)
1/3 cup chopped shallot (about 2 shallots)
2 tablespoons water
3 1/2 cups chopped asparagus tips (about 1 pound)
4 cups 99% Fat-Free Chicken Stock
1 cup shredded spinach leaved, packed (about 2 ounces)
2 teaspoons chopped fresh tarragon
1/8 teaspoon freshly grated nutmeg plus a dash for garnish
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Directions
Combine the onion, shallot, and water in a nonstick frying pan.
Cook for about 6 minutes over medium heat, stirring constantly, until onions are wilted.
Stir in the asparagus and cook, stirring, for 1 minute more.
Add the stock and bring to a boil.
Cover, lower heat, and simmer until the onion and asparagus are tender, about 30 minutes.
Transfer the contents of the pan to a food processor or blender.
Add the spinach and tarragon, and puree until smooth.
Add the nutmeg and process to blend.
Return the mixture to the pan, add the salt and pepper, and reheat for about 3 minutes.
Garnish each serving with a small scraping of nutmeg.
