Asparagus Stuffed Omelet Recipe Video

This Asparagus and Herb Omelet is the perfect example of keepin’ it simple. We’ve got eggs, egg whites, herbs, and asparagus. That’s it! (A kiss of feta cheese as well, but that’s optional). And let me tell you, for a meal with such simplicity you would never think that flavor could be so explosive…but it is; it’s amazingly delicious! I use one whole egg and two egg whites for the omelet but you could certainly do two whole eggs or four egg whites. I really like egg whites and always have my jar of Eggology egg whites in the fridge to help me save some time in the kitchen. I’m forever trying to create some type of balance in my meals, so often, if I know I will be adding cheese to my eggs I’ll skip the yolk and go straight for the whites. If you’ve never made an omelet before, then this video is a must watch! A lot of times when I’m in a rush I just stick to scrambles but as you’ll see in the video making an omelet really isn’t rocket science, it’s like everything else in the kitchen…you just gotta do it!

Ingredients

 
Egg – 1
 
Egg Whites – 2
 
Herbs (basil and mint) – 2 teaspoons, chopped
 
Asparagus – ¼ cup, chopped and steamed
 
Feta cheese – 2 tablespoons
 
Milk – 1 tablespoon
 
Salt and pepper – to taste
 
Olive oil – 1 teaspoon

Directions

GETTING READY
1. In a bowl, take egg, egg whites, milk and a pinch of salt. Whisk it.
2. Add fresh herbs. Stir well.

MAKING
3. In a pan, spray some olive oil.
4. Add the egg mixture and let it cook.
5. Once you see the edges start to set, with a rubber spatula, gently start to pull the edges towards the center and roll the uncooked egg towards the outside, this will get the eggs cooking all the way around.
6. Once you see that eggs are set all throughout the pan, except for a little bit of redness on top, remove from the flame and add the filling. Add steamed asparagus and top it with feta cheese on one half of the omelet. Add it to the broiler and let it cook for 45 seconds.

SERVING
7. To serve Asparagus Stuffed Omelet, fold the omelet from the side there is no filling into half and top it with herbs.

The omelet is an all-time favorite item for breakfast and when you have the asparagus stuffed omelet to start your day, you really don't require anything else. It is quite filling as well as nutritious. A glass of orange juice will be just sufficient to complement.
