Asparagus Florentine (Sparagio Alla Fiorentina) Recipe
Ingredients
2 bunches of fresh asparagus
8 slices prosciutto
1/4 cup (62.5 g) butter or margarine
1/4 cup (30 g) grated Parmesan cheese
Directions
Snap off tough ends of asparagus and wash stalks very well.
Cook asparagus in boiling salted water until just tender.
Drain.
Wrap one piece of prosciutto around a few stalks and fasten with a toothpick.
Butter the bottom of a baking dish and lay bundles of asparagus in the dish.
Sprinkle with cheese.
Bake in a 400°F (200°C) oven for about 10 minutes.
