Asparagus And Almond Mold Recipe
The asparagus almond mold is a savory and delicately flavored gelatin made with asparagus, cream and mayonnaise. Flavored with lemon juice, the asparagus almond mold is served chilled. I like to garnish mine with some extra slivered almonds too!
Ingredients
| Unflavored gelatin | 1 Tablespoon | |
| Cold water | 1/4 Cup (16 tbs) | |
| 1 15 oz can asparagus, cut in 1 inch lengths | ||
| 1 cup liquid from asparagus | ||
| Mayonnaise | 1/2 Cup (16 tbs) | |
| Heavy cream | 1/2 Cup (16 tbs), Whipped | |
| Salt | 1 Teaspoon | |
| Lemon juice | 1 Tablespoon | |
| Almonds | 3/4 Cup (16 tbs), slivered | |
Directions
Soften gelatin in cold water.
Drain liquid from asparagus and add sufficient water to make 1 cup.
Heat liquid and add gelatin; stir until dissolved.
Chill until mixture begins to thicken.
Fold in mayonnaise, whipped cream, salt and lemon juice.
Fold in asparagus and almonds.
Pour into mold and chill.
Serve with mayonnaise flavored with lemon juice.
