Ingredients

 
1 pound asparagus
 
3 tablespoons salad oil or olive oil
 
4 tablespoons finely chopped green onions and tops
 
1 cup water
 
1 teaspoon salt
 
1/4 teaspoon pepper
 
6 eggs
 
1/2 cup grated Parmesan cheese
 
1 tablespoon finely chopped parsley

Directions

Wash asparagus; dry with paper toweling; cut in 1-inch pieces.
Heat oil in a large frying pan; saute asparagus and onions in oil until asparagus is limp and onions are clear.
Pour in water; add salt and pepper; cover pan and simmer for 10 minutes.
Remove cover; break eggs into a saucer, one at a time, then slide out over the top of asparagus, being careful not to break the yolks.
Sprinkle grated cheese and parsley over eggs.
Bake, uncovered, in a moderately hot oven (375 °) for 10 minutes, or until eggs are as set as you wish
