Asparagus Vinaigrette Recipe

Over the years I have mastered the art of making Asparagus Vinaigrette which I was taught by my family elders. The Asparagus Vinaigrette is made with Vegetable which is easy to find at any grocery store. It is the perfect choice for Side Dish. This Asparagus Vinaigrette is a Low Fat recipe. A real hit every time, this Asparagus Vinaigrette is not to be missed!

Ingredients

 
2 packages (10 ounces each) frozen cut asparagus, thawed, or 4 cups 1-inch asparagus pieces, steamed
 
1/4 cup finely chopped onion
 
1/2 cup diced red bell pepper
 
DRESSING
 
2 tablespoons white wine vinegar
 
2 tablespoons lemon juice
 
1 tablespoon grainy Dijon mustard
 
1 tablespoon olive oil (optional)
 
3/4 teaspoon dried oregano
 
1 tablespoon sugar
 
1/4 teaspoon salt

Directions

1. Combine the vegetables in a shallow dish. Combine the dressing ingredients in a small bowl until the sugar dissolves, and pour over the vegetables. Toss to mix well.
2. Cover the salad and chill for several hours or overnight before serving.
