Ingredients

 
2 packages (10 ounces each) frozen cut asparagus, thawed, or 4 cups 1-inch asparagus pieces, steamed
 
1/4 cup finely chopped onion
 
1/2 cup diced red bell pepper
 
DRESSING
 
2 tablespoons white wine vinegar
 
2 tablespoons lemon juice
 
1 tablespoon grainy Dijon mustard
 
1 tablespoon olive oil (optional)
 
3/4 teaspoon dried oregano
 
1 tablespoon sugar
 
1/4 teaspoon salt

Directions

1. Combine the vegetables in a shallow dish. Combine the dressing ingredients in a small bowl until the sugar dissolves, and pour over the vegetables. Toss to mix well.
2. Cover the salad and chill for several hours or overnight before serving.
