Directions
1) From each asparagus stalk, break the tough ends. You can do this by holding the stalk in both hands and slowly bending the stem till it breaks. Note that, depending on the toughness, each stalk will break at a different place.
MAKING
2) Over rapidly boiling water, steam the asparagus tips for 3 to 5 minutes, or until they turn crisp tender.
3) Remove from heat.
4) Quickly place the asparagus under cold running water. This stops the cooking and preserves the color.
5) Drain well.
SERVING
6) Steam-cooked asparagus tips can be used to prepare Asparagus Vinaigrette. This can also be served as a cold salad, with our without a dip. You can also reheat them and serve as a hot vegetable. Do not overcook while reheating or they will lose the crispness and color.
