Asparagus Soup Recipe
Asparagus Soup is a delicious appetizer recipe that is simply easy-to-prepare. Once you have this Asparagus Soup, I am sure you will always crave for it.
Ingredients
1 1/2 pounds fresh asparagus
3 tablespoons butter
4 tablespoons flour
6 cups chicken broth, simmering
1/4 teaspoon salt
Freshly ground black pepper
1 egg yolk, combined with
2 tablespoons milk
Directions
Wash the asparagus.
Cut off and discard any woody ends.
Remove the tender asparagus tips and reserve.
Cut the stalks into 1 inch pieces.
In a large saucepan, heat the butter.
Stir in the flour and cook 2 minutes.
Add the hot broth gradually, stirring with a wire whisk until smooth.
Add the asparagus stalks, salt and pepper and simmer slowly 20 to 25 minutes or until the asparagus is tender.
Puree the soup in a blender and pass it through a sieve to remove the stringy part of the asparagus.
Reheat the soup, add the asparagus tips and simmer slowly about 7 minutes.
Stir in the egg yolk combined with the milk but do not allow the soup to boil.
