Asparagus Sauce Recipe

I have only one word to describe this asparagus sauce recipe : superlicious! The primary ingredient in this is vegetable. It is one italian dish which will never fail to impress you or your guests. Yes it is highly recommended, you must try this asparagus sauce recipe.

Ingredients

 
2 tablespoons butter
 
2 tablespoons olive or vegetable oil
 
2 cloves garlic, finely chopped
 
2 pounds asparagus
 
4 ripe tomatoes, peeled, seeded, and chopped
 
1/2 teaspoon salt
 
1/4 teaspoon freshly ground black pepper
 
1 & 1/2 teaspoons dried basil
 
1/4 cup freshly grated Parmesan cheese
 
1/4 cup chopped parsley
 
1/2 cup pignoli nuts or toasted walnuts
 
1 pound whole wheat noodles, spaghetti or macaroni, cooked al dente and drained

Directions

1. In a large heavy skillet heat the butter and oil and saute the garlic and the stems of the asparagus, cut on the bias, into 1-inch lengths (reserve tips), until crisp-tender.
2. Add the tomatoes, asparagus tips, salt, pepper, and basil Cook for 3 to 5 minutes.
3. Stir in the cheese, parsley, and nuts and toss with the pasta.
