Asparagus Sauce Recipe

2 tablespoons butter
 
2 tablespoons olive or vegetable oil
 
2 cloves garlic, finely chopped
 
2 pounds asparagus
 
4 ripe tomatoes, peeled, seeded, and chopped
 
1/2 teaspoon salt
 
1/4 teaspoon freshly ground black pepper
 
1 & 1/2 teaspoons dried basil
 
1/4 cup freshly grated Parmesan cheese
 
1/4 cup chopped parsley
 
1/2 cup pignoli nuts or toasted walnuts
 
1 pound whole wheat noodles, spaghetti or macaroni, cooked al dente and drained

Directions

1. In a large heavy skillet heat the butter and oil and saute the garlic and the stems of the asparagus, cut on the bias, into 1-inch lengths (reserve tips), until crisp-tender.
2. Add the tomatoes, asparagus tips, salt, pepper, and basil Cook for 3 to 5 minutes.
3. Stir in the cheese, parsley, and nuts and toss with the pasta.
