Asparagus Ratatouille Recipe
Ingredients
| Onion | 1 Medium, sliced | |
| 2 tablespoons olive or vegetable oil | ||
| Garlic | 1 Clove (5gm), crushed | |
| 1 medium green pepper, cut in strips | ||
| Bay Leaf | 1 | |
| Salt | 1/2 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| Tomatoes | 1 Can (10oz) | |
| Zucchini | 1 Medium | |
| 1 pound asparagus, cut in 3/4 inch pieces | ||
| Frozen peas | 1/2 Cup (16 tbs) | |
Directions
Saute onion lightly in the oil in large skillet.
Add next 6 ingredients and simmer, uncovered, 10 minutes.
Cut zucchini in half lengthwise, then cut in 14 inch slices.
Add to mixture with remaining ingredients and simmer about 15 minutes.
