Ingredients

 Fresh Asparagus - 1 pound, 1-inch pieces OR Frozen Asparagus - 10 ounce, chopped
 Green onion1/4 Cup (16 tbs), chopped
 Butter/Margarine2 Tablespoon
 All-Purpose Flour - 2 tablespoons
 Salt1/2 Teaspoon
 Pepper1/8 Teaspoon
 Dairy sour cream1 1/2 Cup (16 tbs)
 Eggs3 , separated
 Cream of tartar1/2 Teaspoon

Directions

MAKING
1) Rinse fresh asparagus or defrost frozen ones. Drain and keep aside.
2) Into a 2-quart casserole, add in chopped green onions and butter. Microwave on HIGH for about 2 minutes.
3) Mix in the flour, salt and pepper. Next, stir in sour cream along with lightly beaten egg yolks.
4) In a medium bowl, add in egg whites and cream. Beat to a stiff texture.
5) Gently fold in the egg whites into the egg yolk mixture.
6) In the bottom of a ring mould, place 1/2 pound of the asparagus.
7) Spread half the amount of the egg mixture over the asparagus. Repeat both the layers.
8) Microwave on medium for about 15 minutes or till the dish starts to become slightly firm. Turn the dish a 1/2 turn every 3 minutes.

SERVING
9) To serve, overturn the Asparagus Puff onto a serving plate. Serve hot.
