Asparagus Mushroom Stir Fry Recipe

Ingredients

 
3/4 pound extra-lean (90% lean) ground beef
 
4 green onions, chopped
 
1 garlic clove, minced
 
2 teaspoons grated fresh gingerroot
 
1 teaspoon vegetable oil
 
1 pound asparagus spears, diagonally cut into 1-inch pieces
 
1 cup quartered fresh mushrooms
 
1 tablespoon soy sauce
 
Salt and freshly ground pepper
 
4 ounces ramen noodles,cooked, drained

Directions

Brown ground beef in wok or large skillet.
Drain.
Add onions, garlic and gingerroot; cook 1 minute.
Set aside.
Wipe out wok with paper towel.
Add oil to wok; heat over medium-high heat.
Add asparagus and mushrooms; stir-fry 2 or 3 minutes or until asparagus is crisp-tender.
Add ground beef mixture to vegetables in wok; stir until heated thoroughly.
Stir in soy sauce; season with salt and pepper to taste.
Add noodles; toss lightly.
