Asparagus Coulis Recipe

Ingredients
2 tbsp (30 ml) butter
10 oz (284 ml) canned asparagus
2 tbsp (30 ml) onion, chopped
1 garlic clove, finely sliced
3/4 cup (180 ml) chicken stock
1/4 tsp (1 ml) chopped chervil
1/4 tsp (1 ml) chopped fennel
Salt and pepper
Directions
– In a saucepan, melt butter and saute asparagus, onion and garlic without browning. Pour chicken stock and fines herbes into mixture, and season with salt and pepper. Simmer for 20 minutes.
– Run mixture through blender, then return to saucepan and cook for 5 minutes.
– Adjust seasoning, then pour through sieve and serve.
