Asparagus Chinese Style Recipe

2 pounds fresh asparagus
 
3/4 cup chicken stock
 
1 tablespoon cornstarch
 
1 tablespoon cold water
 
2 tablespoons soy
 
1 clove garlic, minced or mashed
 
Salt and pepper to taste
 
2 tablespoons olive oil or salad oil

Directions

Wash asparagus well and snap off lower stalks.
Cut diagonally in very thin slices.
Heat chicken stock to boiling and stir in a mixture of the cornstarch, water, and soy; stirring constantly, cook until thickened.
Add garlic and salt and pepper to taste.
Saute sliced asparagus in hot oil for 2 minutes.
Pour over sauce and stirring constantly, cook 1 minute longer.
