Asparagus chicory - 2-2 1/4 lb
Freshly hulled fava beans - 2 cups
Extra virgin olive oil
Salt
Pepper
Directions
GETTING READY
1 In a large pan, bring two thirds full of salted water to a boil.
2 Trim the asparagus chicory, using only the leaves and the younger, tender stalks.
3 Cut into 2 in sections.
4 Wash, and drain.
MAKING
5 Add the asparagus to the boiling water and cook for 15 minutes.
6 Add the fava beans and cook for another 15 minutes, or until tender.
7 Drain well and place on an unheated serving plate.
SERVING
8 Sprinkle with olive oil and freshly ground pepper while still quite hot.
9 Serve at once.
