Asparagus Casserole Recipe

Ingredients
1 tablespoon butter
1 tablespoon unbleached white flour
1 cup milk
4 hard-cooked eggs, sliced
1 1/2 cups cooked asparagus, cut on the diagonal into 1-inch pieces
Salt and freshly ground black pepper to taste, optional
1/2 cup buttered whole wheat bread crumbs
Directions
1. Preheat the oven to 350 degrees.
2. Melt the butter, blend in the flour, and gradually stir in the milk. Bring to a boil, stirring until mixture thickens.
3. Fold in the eggs, asparagus, salt, and pepper. Pour into a 1-quart buttered baking dish, sprinkle with the crumbs and bake for 15 minutes.
