Asparagus and Egg Roll Recipe Video
Ingredients
1 bunch of asparagus (thin is best)
1 Cup of olive oil
1 large onion (sweet)-chopped
6 eggs
1 tsp. Salt, 1/2 tsp. Pepper
1 Cup Pecorino Romano
1 nice piece of Provolone, cut in small pieces
Directions
In a bowl put eggs, salt, pepper, Pecorino Romano,
Beat together. Cut bottoms of asparagus off. Cut remaining asparagus into pieces.
In skillet heat olive oil,put in onions and asparagus sauté till tender, then put in eggs,
add pieces of provolone cheese, mix together, sauté on medium heat, keep mixing
while cooking to avoid eggs from sticking. When done serve on an Italian roll with
mayonnaise and slice tomatoes.
