Ingredients
8 canned asparagus tips
1 oz. white crab meat (canned or frozen)
1 1/2 pints (U.S. 3 3/4 cups) rich chicken stock
Pinch Ve-Tsin, if required
Salt and pepper, if required
1 small teaspoon cornflour
1 tablespon water
1 egg white
Directions
Cut the asparagus tips into pea-sized pieces.
Flake the crab meat.
Have the asparagus and the crab meat ready.
Heat the chicken stock.
If not rich enough, add a pinch of Ve-Tsin.
Taste and season further, if necessary.
Add the asparagus and crab meat.
Blend the cornflour with the water and stir it into the soup.
Boil for 2 minutes.
Remove from the heat and add the slightly beaten egg white, whisking vigorously.
