| Danish blue cheese - 25 grams or 1 ounce | ||
| Mustard powder - 2.5 millilitres or 1/2 level teaspoon | ||
| Chives - 5 millilitres or 1 level teaspoon, chopped | ||
| Wine vinegar - 15 millilitres or 1 level tablespoon | ||
| Natural yogurt | 150 Gram | |
Directions
MAKING
1. In a saucepan of boiling seasoned water; plunge asparagus spears until the base is tender.
2. Let asparagus cool down completely.
FINALISING
3. In a medium bowl, crush blue cheese and mix with mustard and chives.
4. Drizzle vinegar just to moisten the mixture.
5. Add yogurt and mix well.
6. Refrigerate dressing until chill.
SERVING
7. In a plate, place asparagus tips and pour dressing on top.
