Asparagus- And Carrot-Filled Crepes Recipe

Ingredients

 
3 carrots, grated
 
2 tablespoons butter
 
1 10 ounce package frozen asparagus
 
Salt and pepper to taste
 
6 Basic Crepes
 
Fresh grated Swiss cheese

Directions

Saute the carrots in the butter over medium-high heat until they begin to brown.
Add the asparagus to the pan, and cook just until hot.
Season with salt and pepper.
Fill each of the crepes with the filling, and place, seam sides down, on a greased baking sheet.
Top with Swiss cheese, and place under broiler until the cheese is bubbling hot.
Top with a bit of sour cream
