Ingredients

 Cabbage1 Small, thinly sliced
 2 tablespoons kosher or sea salt
 Chives1 Bunch (100gm), finely chopped
 Mint1 Tablespoon, chopped
 Cilantro1 Tablespoon, chopped
 Basil1 Tablespoon, chopped
 Champagne vinegar1/3 Cup (16 tbs)

Directions

Toss cabbage with salt and let stand until wilted, about 30 minutes.
Rinse cabbage and squeeze dry.
Put in a medium bowl and toss with chives, mint, cilantro, basil, and vinegar.
