Asian Chicken Salad Recipe
Ingredients

| 1 carrot, cut into julienne | ||
| 1/2 green paw-paw or papaya, peeled and cut into julienne | ||
| Mint | 3 Tablespoon, chopped | |
| 3 tablespoons chopped coriander leaves | ||
| Spring onions | 1 Bunch (100gm), sliced | |
| 1/2 celeriac, cut into julienne | ||
| 25 g unsalted peanuts, roughly chopped | ||
| black pepper | 1 | |
| Garlic | 2 Teaspoon, finely chopped (For the dressing) | |
| 1 tablespoon finely chopped chilli | ||
| Lime juice | 150 Milliliter (For the dressing) | |
| Fish sauce | 2 Tablespoon, reduced (For the dressing) | |
| Runny honey | 1 Tablespoon (For the dressing) | |
Directions
To make the dressing, combine the ingredients in a bowl.
In another large bowl, mix the remaining ingredients with enough of the dressing to coat and season well with black pepper to taste.
