Ingredients

 Shredded chicken450 Gram
 1 carrot, cut into julienne
 1/2 green paw-paw or papaya, peeled and cut into julienne
 Mint3 Tablespoon, chopped
 3 tablespoons chopped coriander leaves
 Spring onions1 Bunch (100gm), sliced
 1/2 celeriac, cut into julienne
 25 g unsalted peanuts, roughly chopped
  black pepper1
 Garlic2 Teaspoon, finely chopped (For the dressing)
 1 tablespoon finely chopped chilli
 Lime juice150 Milliliter (For the dressing)
 Fish sauce2 Tablespoon, reduced (For the dressing)
 Runny honey1 Tablespoon (For the dressing)

Directions

To make the dressing, combine the ingredients in a bowl.
In another large bowl, mix the remaining ingredients with enough of the dressing to coat and season well with black pepper to taste.
