Ingredients

 
Chopped ash gourd peels 2 cups
 
Sesame 2 tsp
 
Grated coconut, 1/2 cup
 
Green chilies, chopped 3-4
 
Tamarind 2 inch piece
 
Salt to taste
 
Mustard seeds 1 1/2 tsp
 
Fenugreek seeds 1/4 tsp
 
Turmeric powder 1/2 tsp
 
Asafoetida 1/4 tsp
 
Oil of your choice 2 tsp

Directions

Heat the oil in a pan and place the mustard seeds in it.
When the seeds start to splutter put in the Fenugreek seeds, green chillies, sesame seeds and the turmeric and asafoetida.
Then add the chopped ash gourd peels and stir fry for about 5 minutes, adding a little water if I required.
Finally add the coconut and stir fry till it is nicely browned.
Leave to cool.
Add the salt and tamarind and adequate water for grinding the chutney and blend; in the blenderiser.
Use as a spread on bread, rotis, parathas or even idlis and dosas.
