Arugula with Sun Dried Tomatoes Recipe
Ingredients
| 8 sun-dried tomatoes (packed without oil) | ||
| Hot water | 1/2 Cup (16 tbs) | |
| 1/3 cup fat-free French dressing | ||
| Balsamic vinegar | 1 Tablespoon | |
| 1 tablespoon unsweetened apple juice | ||
| Dijon Mustard | 1 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
| Arugula | 4 Cup (16 tbs) | |
| Parmesan cheese | 1/4 Cup (16 tbs), grated | |
Directions
Combine tomatoes and hot water in a small bowl; let stand 10 minutes.
Drain and cut tomatoes into quarters.
Combine dressing and next 4 ingredients in a small bowl, stirring well.
Combine tomato and arugula in a bowl, tossing lightly.
Drizzle dressing mixture over arugula mixture.
Sprinkle with Parmesan cheese.
