Arugula Tomato And Olive Salad Recipe
Ingredients
| Garlic | 1 Clove (5gm), minced | |
| Salt | 1/2 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| Dried oregano | 2 Teaspoon, chopped | |
| Red wine vinegar | 3 Tablespoon | |
| Extra virgin olive oil | 1/3 Cup (16 tbs) | |
| 2 large ripe tomatoes, about 1 pound | ||
| 8 ounces arugula or Ismail head of curly endive | ||
| 1/2 cup oil-cured black olives | ||
| Red onion | 1 Small, thinly sliced | |
Directions
1. In a large bowl, combine garlic, salt, pepper, oregano, vinegar, and olive oil. Beat with fork to blend.
2. Cut each tomato into 8 wedges. Toss tomatoes, arugula, olives, and onion together in bowl with dressing.
