 Garlic1 Clove (5gm), minced
 Salt1/2 Teaspoon
 Pepper1/4 Teaspoon
 Dried oregano2 Teaspoon, chopped
 Red wine vinegar3 Tablespoon
 Extra virgin olive oil1/3 Cup (16 tbs)
 2 large ripe tomatoes, about 1 pound
 8 ounces arugula or Ismail head of curly endive
 1/2 cup oil-cured black olives
 Red onion1 Small, thinly sliced

Directions

1. In a large bowl, combine garlic, salt, pepper, oregano, vinegar, and olive oil. Beat with fork to blend.
2. Cut each tomato into 8 wedges. Toss tomatoes, arugula, olives, and onion together in bowl with dressing.
