Arugula Salad With Mango And Blue Cheese Recipe
Ingredients
4 bunches arugula, torn
1/2 cup (about 3-4 ounces) crumbled blue cheese
1 ripe mango, peeled and diced
Salt and pepper
1/2 cup dry-roasted sunflower seeds (salted, if desired)
DRESSING
1 lime, zest finely grated and lime then juiced
3 tablespoons rice vinegar
4-5 tablespoons olive oil
Directions
1. Combine arugula, blue cheese, and diced mango in a bowl. Add salt and pepper to taste. Toss.
