 Rice vinegar3 Tablespoon (DRESSING)
 Olive oil5 Tablespoon (DRESSING)
 Salt To Taste
 Pepper To Taste

Directions

1. Combine arugula, blue cheese, and diced mango in a bowl. Add salt and pepper to taste. Toss.
2. Whisk together dressing ingredients. Dress and garnish servings with a generous handful of sunflower seeds.
