Artichokes With White Sauce Recipe

Ingredients
4 globe artichokes
1/2 lemon
4 tablespoons butter
5 tablespoons flour
1/2 cup light cream
salt and pepper
Directions
1 Carefully wash the artichokes. Break off the stem as near to the leaves as possible. Rub the bottoms with the half lemon.
2 Place the artichokes in a pan of salted water, bring to a boil and cook for 40 minutes. Drain, reserving the water.
3 Melt the butter in a saucepan. Add the flour and stir with a wooden spoon. Let cook for 3 minutes, making sure that the flour does not brown.
4 Add H cups of the artichoke water, while beating with a whisk. Bring to a boil whisking continually, then let cook on low heat for 10 minutes.
5 Fold the cream into the sauce. Allow it to boil for 2 minutes and then adjust the seasoning. Put the artichokes on a heated serving dish and serve the sauce from a sauce- boat
