Artichokes With Lemon Sauce Recipe

Directions
Remove the stalks of the artichokes and take off the outer leaves.
Rinse the artichokes in cold water.
Stand side by side in a large casserole with 1/4 cup (4 tablespoons) of water.
Add salt.
Cover and microwave on HIGH for 16-18 minutes, depending on the size of the vegetables.
A leaf will pull out easily when cooked.
Leave the artichokes to stand for 5 minutes then turn upside-down in a strainer (sieve) to drain.
To prepare the sauce, cut the butter into tiny pieces and put into a bowl.
Melt in the microwave oven on mediub for 2 minutes.
Add the lemon juice and egg yolks and beat with a hand whisk.
Microwave on mediub for 1 minute.
Whisk again.
Add salt and pepper to taste.
Pour the sauce into a sauceboat.
Put the artichokes on to a serving dish covered with a folded white table napkin.
