Artichokes A La Grecque Recipe

Ingredients
4 medium-sized artichokes
1 cup (250 mL) water
10 cardamom seeds
2 garlic cloves, peeled
Grated rind of 1 lemon
Juice of 1 lemon
1/4 tsp (1 mL) thyme
1/4 tsp (1 mL) salt
1/4 cup (60 mL) parsley, minced
A good pinch of pepper
1/3 cup (80 mL) olive oil
Directions
Prepare the artichokes as for Artichokes "Nature.
Set them stem-side down in a microwave-safe dish one next to the other.
They can also be cut in half and placed in the dish with the pointed part toward the middle, the larger part toward the edges.
Mix all the remaining ingredients.
Stir until well blended.
If the artichokes are cut in half, pour the mixture over them.
If they are left whole, spoon mixture over the top so that some of it runs down between the leaves.
Cover dish with lid or plastic wrap.
Microwave 10 minutes at HIGH.
Lift a corner of the lid, move the artichokes around.
Microwave another 10 minutes at MEDIUM-HIGH.
Remove from microwave.
Let stand 5 minutes.
Uncover and baste with juice in the dish.
Remove the artichokes to a serving platter.
Microwave the sauce, uncovered, 3 to 5 minutes at HIGH or until slightly thickened.
Pour over the artichokes.
Serve hot, preferably.
They are also tasty served at room temperature.
