Artichokes Barigoule Recipe

Ingredients

 
4 medium-sized artichokes
 
5 cups (1.25 L) cold water
 
3 tbsp (50 mL) white vinegar
 
3 tbsp (50 mL) butter
 
1 tbsp (15 mL) vegetable oil
 
2 onions, chopped fine
 
1/2 tsp (2 mL) thyme
 
1 bay leaf
 
3 tbsp (50 mL) cider vinegar
 
1/4 cup (60 mL) dry vermouth
 
Salt and pepper to taste

Directions

€¢ Prepare artichokes as for Artichokes Nature.
€¢ Place in a microwave-safe dish, cover with the cold water. Add the first 3 tablespoons (50 mL) vinegar and let stand at least 30 minutes. When ready to cook, drain well and cut each in half.
€¢ Place butter and oil in a 10 x 6-inch (25 X 15 cm) microwave-safe baking dish.
€¢ Add the onions.
€¢ Microwave, uncovered, 4 to 5 minutes at MEDIUM, stirring once during the cooking period.
€¢ Remove from microwave. Stir in the thyme, bay leaf, vinegar and vermouth.
€¢ Place the well-drained artichoke halves around the dish; leave centre free. Cover with waxed paper.
€¢ Microwave, uncovered, 4 to 5 minutes at MEDIUM, stirring once during the cooking period.
€¢ Remove from microwave. Let stand covered 15 minutes.
€¢ Place artichokes attractively in a dish and pour sauce over. Cover and let cool to room temperature.
€¢ They should be served tepid or cooled.
€¢ When refrigerated, take out one hour before serving.
