Ingredients

 Artichokes5 Quart
 Coarse salt1 Cup (16 tbs)
 Turmeric3⁄4 Tablespoon

 Dry mustard1 Tablespoon
 Flour1⁄2 Cup (8 tbs)
 Brown sugar1 Cup (16 tbs)
 White sugar4 Cup (64 tbs)
 Water1 Cup (16 tbs)
 Peppers8 Large (Red And Green)
 Onions7
 Vinegar3 Quart

Directions

Wash artichokes carefully; cut into small bits.
Sprinkle with salt; let stand overnight.
Rinse and squeeze out water.
Make a paste of turmeric, pepper, dry mustard, flour, brown sugar, 1 cup white sugar and water.
Boil until thick.
Grind peppers and onions; mix with artichokes, paste, vinegar and re maining sugar.
Simmer for 20 minutes; seal in hot jars.
