Artichoke Benedict with Hollandaise Recipe
A Delicious Breakfast Treat, For your Sunday Brunch, or just to spice up your mid week Doldrums
Ingredients
Benedict
2 Artichoke Bottoms (Drained and Rinsed)
2 Slices Canadian Bacon (Or Smoked Ham with no Sugars or Maple Syrup)
2 Eggs
4 Tbs Hollandaise Sauce (See Below for low fat Recipe)
Low Fat Hollandaise
2 Egg Whites
1 Tbs Light Margarine, Trans Fat Free (I use I can't beleave it's not butter Light)
1 tsp Lemon Juice
1/2 tsp Dijon Mustard
Dash of your Favorite Hot Sauce (I use Crushed Habenaros)
Directions
For Hollandaise
On a double Boiler over medium heat, add All Ingredients and Begin Wisking For about 3-5 minutes
Till mixture thickens to a thick creamy consistency, cooting the back of a spoon
For Benedict
Poach Eggs in Water with a dash of lemon juice or Vinegar till your desired Level of Doneness
Warm Bacon and Artichokes in a Dry Saute pan
Place ham on top of the Artichoke, place egg on Ham and top with 2 tbs of Hollandaise Sauce
