Jerusalem Artichoke Soup Recipe

Ingredients
1 1/2 lb. Jerusalem artichokes
1 1/2 pt. vegetable stock
Pinch of pepper
1 onion
1/2 pt. milk
1 stalk celery
1-2 tsp. salt
1 oz. fat or dripping
Directions
Cook in the same way as Mixed Vegetable Soup.
When cooked, rub through a sieve or put in a blender, and reheat with the milk and seasoning.
Taste for seasoning.
