Artichoke Nibbles Recipe
Ingredients
| 2 jars marinated artichoke hearts | ||
| Onion | 1 Small, finley minced | |
| Garlic | 1 Clove (5gm), finley minced | |
| Eggs | 4 standard | |
| 1/4 cup fine breadcrumbs | ||
| Salt | 1/4 Teaspoon | |
| 1/8 tsp. each pepper oregano, tabasco | ||
| Shredded sharp Cheddar cheese | 1/2 Pound | |
| Parsley | 2 Tablespoon, minced | |
Directions
Drain marinade from one jar of artichokes into a frying pan.
Add onion, garlic and chopped artichoke hearts and saute until onion is limp, about 5 minutes.
In bowl beat eggs with fork, add crumbs, salt, pepper, oregano and tabasco.
Stir in cheese, parsley and artichoke -onion mixture.
Turn into greased 7 x 11 inch baking pan and bake at 325° for 30 minutes or until set when light to touch.
Let cool in pan then cut into 1-inch pieces.
