Artichoke Lily Recipe

Ingredients

 
4 tsp (20 ml) salt
 
2 tbsp (30 ml) flour
 
2 tbsp (30 ml) lemon juice
 
5 tbsp (75 ml) milk
 
4 artichokes
 
1/3 Cup (80 ml) vinaigrette or mayonnaise
 
1 tomato, diced

Directions

–  In a saucepan filled with water, combine salt, flour, lemon juice, and milk. Beat ingredients with a wire whisk and bring to a boil. Add artichokes and cook until artichoke stems are tender or until tip of knife glides easily through artichoke bottom. Let stand to cool.
–  Arrange outer leaves in a circle on a large dish. Remove the hairy part of the heart, then peel slightly- Dice the heart and the bottom and toss the pieces in vinaigrette or mayonnaise. Put the diced artichoke in the center of the dish, and spoon vinaigrette or mayonnaise over the outer leaves.
–  Top the "lily" with diced tomatoes.
