3/4 lb. extra-lean (90% lean) ground beef
 
1/2 cup fresh mushroom slices
 
1/4 cup chopped onion
 
1 garlic clove, minced
 
1 (14-ounce) can artichoke hearts,drained, rinsed, chopped
 
1/2 cup dry bread crumbs
 
1/4 cup (1 ounce) grated Parmesan cheese
 
2 tablespoons chopped fresh rosemary or 1 teaspoon dried leaf rosemary
 
1 1/2 teaspoons chopped fresh marjoram or 1/2 teaspoon dried leaf marjoram
 
Salt and freshly ground pepper
 
3 egg whites

Directions

Preheat oven to 400°F.
Spray 1-quart casserole with nonstick cooking spray.
Brown ground beef in medium skillet.
Drain.
Add mushrooms, onions and garlic; cook until tender.
Combine ground beef, artichokes, crumbs, cheese, rosemary and marjoram; mix lightly.
Season with salt and pepper to taste.
Beat egg whites until stiff peaks form; fold into ground beef mixture.
Spoon into prepared casserole.
Bake 20 minutes or until lightly browned around edges.
