Ingredients
1/2 cup frozen chopped onion (from a 12-ounce bag)
1 tablespoon olive oil
1 package (6 ounces) curried rice
1 package (6 ounces) frozen crabmeat, thawed and broken in chunks
1/2 pound fresh fillets of sole, cut in bite-size pieces
2 1/2 cups water
1 package (9 ounces) frozen cut green beans
Directions
1 Saute onion in olive oil just until soft in a large frying pan; stir in rice and contents of the seasoning packet.
Cook, stirring constantly, over low heat just until rice is hot.
2 Spoon half into a shallow 6-cup baking dish to cover bottom; top with half of the crabmeat and sole.
Repeat layers, arranging sea foods attractively on top.
3 Stir water into frying pan; heat to boiling; pour over layers in baking dish; cover.
4 Bake in moderate oven (350°) for1 hour, or until rice is tender and liquid is absorbed.
5 While seafood bakes, cook beans and season, following label directions; spoon in a ring on top of seafoods.
