Ingredients
1 1/2 pounds raw shrimp
3 tablespoons butter
1 cup fresh tomato puree
1/4 cup heavy cream
2 1/2 cups rice, cooked
Salt and pepper to taste
Directions
Shell and devein shrimp.
Saute shrimp in butter for about 5 minutes or until they are bright pink.
Add tomato puree and cream; stir well.
Cook the shrimp gently in the sauce until heated through.
Combine shrimp mixture with rice, and season with salt and pepper.
Turn shrimp and rice into a buttered casserole and bake at 350° for 10 minutes.
