Spanish Yellow Rice with Cod Fish Recipe Video
Ingredients
Pot full of boiling water
3 tbs. Sofrito
3 tbs. Recaito
1/3 cup Alcaparrado
1 tbs. Tomato Sauce
1 cup Frozen Peas and Carrots
1/2 lb or 1/2 pack of Salt Cod/Bacalao
2 envelopes Sazon /Culantro & Achoite
1 tbs. dried Cilantro
Salt and Pepper to taste
1 tsp Chicken Bouillon
1 tsp. Garlic Powder
1/4 tsp. Red Pepper Flakes (optional)
3 -1/2 cups Water
3 cups Extra Long Grain Rice
3 tbs. Vegetable Oil
Directions
In the pot full of boiling water add in Salted Cod fish and let boil for 10 minutes, drain and rinse with cold water. Then taste-if the cod fish is a little salty, move on to the next step, if very salty, repeat boilding water, add fish and boil for 10 more minutes, drain, rinse and taste. Shred fish with fork and set aside. You should have about 1 cup of shredded cod fish. In a pot where you cook rice, pour in oil- once oil is hot, add in sofrito, recaito- cook for about 1 minute, then add in Alcaparrado, tomato sauce and shredded cod fish, cook on medium/high heat for about 5 minutes. After 5 minutes add in all spices and mix in well. Pour in rice and saute for about 1 minutes- mixing spices, cod fish and rice together. After 1 minute add in water and give a quick stir. Place temperature on high. When water boils add in peas and carrots. Once rice dries up lower temperature to the lowest setting and add a lid. Let cook for 25 minutes -- DO NOT TOUCH POT OR RICE FOR 25 MINUTES!! After 25 minutes uncover and turn rice. Shut off heat. Let sit for 5 more minutes and serve. ENJOY!!!
