Ingredients
4 tsp (20 ml) butter
4 tsp (20 ml) flour
2 cups (500 ml) fish stock
1/2 garlic clove, finely sliced
Pinch of chopped tarragon
Pinch of chopped chives
Pinch of chopped chervil
Pinch of chopped thyme
1 tsp (5 ml) chopped parsley
Salt and pepper
1/4 cup (60rnL) 35% cream
Directions
– In a saucepan, melt butter, add flour and mix well. Pour fish stock into mixture in thin trickles, stirring constantly. Add garlic and fines herbes. Season with salt and pepper, and simmer for 10 minutes.
