Armenian Style Shish Kabobs Recipe Video
|Top sirloin meat/Boneless lamb||1 1⁄2 Pound, cut into 1 1/2 inch cubes|
|Red wine||1 Cup (16 tbs)|
|Red wine vinegar/Lemon juice||1 Tablespoon|
|Coriander powder||1 Tablespoon|
|Fresh ground black pepper||To Taste|
|Italian parsley||1⁄4 Cup (4 tbs), chopped finely|
|Onions||1⁄2 Large, chopped finely|
|Tomato||2 , cut into eights|
|Garlic cloves||2 Large, finely chopped (use more to taste)|
|Olive oil||1⁄2 Cup (8 tbs) (2 tablespoons for the macaroni and veggies)|
|Kosher salt||To Taste|
|Macaroni||2 Cup (32 tbs), cooked, drained|

Things You Will Needmetal skewers
1.In a bowl toss beef with garlic, onions, tomatoes, parsley and mix well until evenly combined.
2.To the bowl containing the beef, add coriander powder, red wine vinegar, red wine and freshly ground black pepper.
3.Place the marinated meat in refrigerator at least 24 hours. Be sure to toss the mixture 3 to 4 times during the marinating time.
4.Preheat the grill. Regulate the temperature to about 300 degree
5.Thread the meat on to separate metal skewers. Brush the meat with olive oil and then set aside to chill until just before grilling.
6.You will have left over onions and tomatoes from the marinade which you can convert into a side dish.
7.Drain the vegetables of the excess liquid. Place the vegetables into an aluminium baking dish and place on the hot grill.
8.Add more tomatoes and mixed herbs if required. Season the vegetables with salt, pepper and olive oil.
9.Add boiled macaroni to the vegetable salsa and serve the macaroni salsa along with kebobs.
10.Season the skewers with salt just before placing the skewers on the grill, turning frequently. If you are using lamb, cook the meat for 10 minutes and the beef for 15 minutes or more until well done.
11.Remove from grill, and set aside to rest. The vegetables can cook alongside the meat skewers for 20 minutes.
12.Serve hot with side dishes like grilled whole onions, tomatoes, pinto beans in tomato sauce, white garlic sauce or mushrooms and corn-on-the-cob.
13.If you are using bamboo or wooden skewers, soak them in water for 20 minutes.
