Armenian Spinach Plum Salad Recipe

Ingredients
| 3 cups spinach, washed, stems removed and leaves torn into bite sized pieces | ||
| 2 cups peeled and halved cucumber slices | ||
| 1/4 cup thinly sliced red onion | ||
| Minced parsley | 1/4 Cup (16 tbs) | |
| 2 tablespoons pistachios, shelled and chopped (optional) | ||
| Plums | 3 , cut into wedges | |
| Armenian Dressing | ||
Directions
Combine spinach, cucumber, onion, parsley, pistachios and plums in salad bowl.
Add Armenian Dressing and toss lightly to coat.
Armenian Dressing: Combine 1/3 cup safflower oil, 2 to 3 tablespoons freshly squeezed lemon juice, 1/2 teaspoon dried oregano leaves, 1/2 teaspoon minced garlic, 1/4 teaspoon dry mustard and pepper to taste; whisk until well blended.
Add Armenian Dressing and toss lightly to coat.
