Armenian Spinach Plum Salad Recipe

 3 cups spinach, washed, stems removed and leaves torn into bite sized pieces
 2 cups peeled and halved cucumber slices
 1/4 cup thinly sliced red onion
 Minced parsley1/4 Cup (16 tbs)
 2 tablespoons pistachios, shelled and chopped (optional)
 Plums3 , cut into wedges
 Armenian Dressing

Directions

Combine spinach, cucumber, onion, parsley, pistachios and plums in salad bowl.
Add Armenian Dressing and toss lightly to coat.
Armenian Dressing: Combine 1/3 cup safflower oil, 2 to 3 tablespoons freshly squeezed lemon juice, 1/2 teaspoon dried oregano leaves, 1/2 teaspoon minced garlic, 1/4 teaspoon dry mustard and pepper to taste; whisk until well blended.
