Armadillo Eggs Recipe
Ingredients
| Monterey jack cheese | 1/2 Pound, grated | |
| Cheddar Cheese | 1/2 Pound, grated | |
| 1/2 lb. hot Jimmy Dean sausage | ||
| Bisquick | 1 1/2 Cup (16 tbs) | |
| Jalapeno peppers | 20 To taste, canned | |
| Egg | 1 | |
| Pork package | 1 | |
Directions
Mix cheeses together and divide in half.
Mix half of the cheese with the sausage and Bisquick (makes a pretty stiff dough); set aside.
Slit jalapenos and remove seeds.
Fill each pepper with the remaining cheese.
Makes 15 to 20 balls from dough mixture.
Pat dough out into circles about 1/4 inch thick.
Place stuffed pepper on dough and roll to form an egg shape.
Beat egg slightly.
Dip each egg into egg, then in coating mix.
Place on cookie sheet and bake 20 minutes at 325°.
