Arkansas Crab Gumbo Recipe



 Onion1⁄2 Cup (8 tbs), chopped
 Celery1⁄2 Cup (8 tbs), chopped
 Green pepper2 Tablespoon, finely chopped
 Garlic1 Clove (5 gm), pressed / minced
 Butter/Margarine2 Tablespoon
 Frozen okra10 Ounce, partially defrosted and sliced (1 Package)
 Canned stewed tomatoes14 1⁄2 Ounce (1 Can)
 Sugar1⁄4 Teaspoon
 Bay leaf1
 Thyme1⁄4 Teaspoon
 Salt1 Teaspoon
 Canned crab meat6 1⁄2 Ounce, drained and broken (1 Can)
 Cooked rice1 1⁄2 Cup (24 tbs)

Combine onion, celery, green pepper, garlic and butter in 2-quart casserole.
Microwave 3 to 4 minutes on high, or until onion is transparent.
Add okra, tomatoes and seasoning; Cover tightly.
Microwave 12 minutes on high, or until okra is tender and mixture is bubbly.
Remove bay leaf.
Add crab meat.
Cover and let stand 5 minutes.
