Bone the meat, trim away all the fat, or get the butcher to do this for you.
Chop or grate the fat finely, and put it into a saucepan, into which you also put the bone.
Spread the shredded cabbage leaves, and chopped carrot over this, add the stock, cover, and simmer over a gentle heat for 45 minutes.
Then push the cabbage aside, and drop into the middle of the saucepan the shoulder of mutton rolled, tied and well seasoned.
Add a glass of hot stock, cover, and simmer for about 2 hours.
Turn the meat from time to time, adding a little stock if necessary: but when cooking is completed there should be no liquid remaining in the saucepan.
