Ardenne Potato Cake Recipe

Ingredients
1/2 pound potatoes
3 tablespoons flour
1 cup confectioners' sugar
3 eggs, separated
Directions
Boil the potatoes until tender.
Drain and mash.
Blend in the rice flour, confectioners' sugar and egg yolks until the ingredients are thoroughly combined.
Beat the egg whites until stiff and carefully fold them into the potato mixture.
Shape the mixture into a cone and place on a buttered baking sheet.
Bake in a preheated 400° oven for 45 minutes to 1 hour.
